Cooking is a fun activity to do with children at home, and all the 'messing about' is what makes it so enjoyable. Mix in some laughter and you've got a recipe for a great afternoon!

TG's Child Care has been implementing indigenous programs in all of their centres as a way to boost their sustainability values. It also helps children to build eco and social intelligence. Children learn to respect and care for their environment and all the living things that inhabit it.

Perhaps we may not know that cooking in indigenous cultures also has a lot of wisdom in it. There is a lot of importance placed on sharing one's table, and food is a way to break down boundaries between people. And of course, it is completely sustainable in that the ingredients come straight from the land around the people. Nothing had to be put on a plane to be delivered. Australia is rich in beautiful, amazing flavours and indigenous cooking brings justice back to enjoying what we already have on our doorstep.

Wattle seeds are edible seeds from the Australian Acacia and it was traditionally used as food by the Aboriginal Australians. It has a high nutritional content and is suitable for use in diabetic foods.

For those who may not be familiar with Australian terms, damper is also known as bush bread or seedcake. It's bread made by Australian Aborigines. It´s typically made by crushing native seeds into a dough and then baking them in hot coals.

Try this beautiful Wattle Seed Damper with your children!

Ingredients:

  • 3 cups of self raising flour

  • A pinch of salt

  • 1 tbspn of wattle seeds

  • 1/2 cup of water (or more)

Note: Remember to pre-heat your oven to 180degC.

Method:

  1. Add the self raising flour and wattle seeds and salt to a large bowl.

  2. Next, add a bit of water, mix and gradually add more water until you get a dough consistency.

  3. Sprinkle some flour on a board and place the dough on the board.

  4. Knead well.

  5. Place onto a tray and put it in the oven.

  6. Note that the size of your damper and cooking time will vary depending on the size. If you are not sure, just tap it and if it sounds hollow, it is ready!

  7. Let cool and serve with butter and jam.

And there you have a healthy breakfast or afternoon tea time treat!
