Easter in Spain is a big deal, with the solemn Holy Week processions being the highlight of the celebrations. On the culinary front, one of the most typical sweets that are served during this time is the humble torrijas. It's a type of bread pudding, which basically consists of dipping slices of bread in a mixture of milk, eggs and sugar. Each family has their unique recipe (the best Spanish food is found in a Spanish grandmother's house, so don't feel you need to spend loads at a Michelin-star restaurant with a year-long waiting list) but what many Spaniards tell me is it's best to use stale bread. Let it sit for a couple of days because stale bread is 'tougher' and can soak up more of the mixture. Torrijas, or Spanish bread pudding The beauty of torrijas is really in its simplicity and tradition. It's not a sophisticated, intricate dessert, but it does conjure up wonderful memories for many Spaniards as they recall their grandmothers frying torrijas in the kitchen when they were children. It is typically fried in olive oil, and given our current climate change crisis, this treat is no longer as humble as it used to be. Olive oil prices in Spain have increased by 112% since last year. Yes, you read that right. 112%. Drought and extreme heatwaves have affected the olive trees and production has plummeted as a result. Spain is the world's leading producer of olive oil, and this is a harsh fact of climate change hitting us right between the eyes. A quintessential must-have in the kitchen is now so expensive you'll think twice about frying your food. True blue Spaniards will swear by the olive oil and say you cannot possibly downgrade torrijas by using an alternative oil. Where torrijas used to be a humble dish that was perhaps born out of an idea not to waste stale bread (not unlike our Chinese fried rice using leftover rice and bits and bobs in the fridge to whip up a new dish), it is now a royal treat. It can be very easy to get carried away, so set a budget, make it an amount that you are comfortable spending and stick to it. Design your own wedding invitations or send them out via e-invites There’s no need to pay through the nose to get invitations professionally made. You can create top-quality invites yourself – all you have to do is hop online and search for websites that allow you to design custom wedding invitations. You could even ditch the traditional paper invitations and send out e-invites. Not only will you save on postage costs, but you’ll also save yourself the trouble of writing all those addresses on envelopes. 2. Serve a signature drink If you don’t want to provide and pay for a fully stocked bar you can save a lot of money by serving one signature cocktail to all guests. Be creative, use the Bride and Grooms preferred flavours, give the cocktail a catchy name that relates to you. Get married on a weekday Thousands of dollars can be saved by getting hitched on a weekday as opposed to a weekend. Lots of couples are doing this already in an effort to save. - Seeing the Hungry Ghosts Festival in a different light
✦ No, don't call the Ghostbusters! It's just the Hungry Ghosts Festival! This takes place usually in August and September, the exact date follows the Chinese lunisolar calendar, on the 15th day of the seventh month. That's when the Chinese celebrate this most unusual festival - the Hungry Ghosts Festival! If you've never heard of it, you may be intrigued by what exactly it is. The Mexicans have their famous Día de Muertos with their trademark colourful skulls. And the Chinese have their Hungry Ghosts Festival. It's one of the most important traditional festivals celebrated in China and by Chinese all over Asia. You may know it by its Chinese name, the Zhongyuan (Chinese: 中原) Festival. Food offerings to the spirits during the Hungry Ghosts Festival During this period, the spirits roam the realm of the living and people prepare rituals and food offerings to honour their ancestors and appease these spirits that are roaming around. If you're squeamish and perhaps have seen one too many horror movies, rest assured. This is nothing to be terrified of. Perhaps after reading this you'll see this festival in a very different light. Spirits roaming free The Chinese believe that during this month, the gates of the underworld open up and the spirits come out to play. They are free to roam, 'enjoy' themselves, perhaps visit the people they love and miss, or go to places they used to frequent. By the end of the month, the spirits return again to the underworld. This is not a story to scare adults, much less little children, and it's not so important if you believe in the underworld or not. Just the idea of the souls of people who have passed on and can actually return, albeit briefly, from wherever they are for a visit, is actually rather moving if you think about it. And if these are simply our ancestors swinging by for a visit, then there's really nothing to fear now, is there? Horror movies are made to scare and entertain and if they didn't do their job you'd vote them down on the Rotten Tomatoes website. The Hungry Ghosts Festival is a time for the living to pay respects to their ancestors, to remember fondly loved ones who have passed on, and to remember to be kind to wandering spirits who may not have anyone to mourn them or miss them. It is also a sobering reminder that we who are living, are also ephemeral beings. Right now we can enjoy a full life and partake in all the joys that life bestows on us. Why not share some of what we have with the spirits? How to celebrate 1. Speak to those who have passed on No no, we're not talking about dusting off that ouija board you have in the closet. Many of us may have photographs of family members and loved ones who have passed on in our living spaces. Remembering loved ones who have gone is not always, or only, about grief. It's also about celebrating who they were and what they have taught us during the precious time we've shared with them. This is a time to fondly remember them, perhaps think about a message you'd want to tell them, and come up with your own little prayer to these loved ones, and trust that from wherever they are, they are also sending us their blessings. 2. Share the good food What's a celebration without good food? The Chinese are famous for their culinary delights, and you can be sure that there isn't a single Chinese festival that doesn't involve food of some kind! And the important thing about good food is that when it is shared, it tastes even better! The Chinese prepare food offerings to the spirits three times a day. The Chinese believe their ancestors will visit their homes and partake of the meals offered to them. You may have seen these offerings being set up. Three bowls of rice with three accompanying sets of chopsticks and why not include three cups of wine too to finish off the meal? There is no limit to what you wish to put out as offerings - meat, fruits and sweet things. Perhaps you may have a pet that has passed on and you can put out some of their favourite doggy or kitty treats on a dish. After all, a pet is very often treated as a member of the family. *Note: If you're dining in a Chinese restaurant or invited over for a meal at a friend's place, never stick your chopsticks standing up straight in the middle of your rice bowl. That is actually a 'secret code' for the spirits to indicate they are welcome to eat here! So unless you generously wish to share your rice with them, otherwise, place your chopsticks on the little piece of chopstick rest, or on the table if there isn't one. 3. Burning offerings Now this is the really interesting bit and for those who grew up with the culture you won't be too surprised and may not even realise how strange this really looks to people who don't know anything about it! You may have seen people outdoors, burning either incense, joss papers, red candles or sometimes different objects made of paper. Before you start having an attack of eco-anxiety, there are metal containers that are placed strategically around for people to burn their offerings. So nobody is going to start a fire by burning offerings anywhere. Burning incense and candles as offerings to spirits Even culture has to move with the times, and you'll see people burning paper effigies such as mansions, luxury cars, and even smartphones! These are meant to be offerings or gifts for the spirits and burning them is a way for the spirits to receive them on their end. We are very tickled by the idea of burning smartphone effigies, because we wonder if it means spirits will make contact from the other side, the smart way! We hope they have optic fibre working well where they are! At the end of the day, it's the thought that counts. So don't worry if you're not comfortable burning offerings. Perhaps even just lighting a white candle at home and spending a quiet time in contemplation is offering enough. 4. Live entertainment This is a typical sight during this month. There will be special live performances, typically some form of Chinese opera, or singers belting out old favourites. You are welcome to watch if you wish, but bear in mind that you do not rush to take a seat in the first and second rows of the performance. These seats are reserved for the spirits, as they are the special guests during this time. Live entertainment during the Hungry Ghost Festival on 1:39' 5. Lead them gently home This is our favourite - it's the gentlest way of celebrating this festival. Some people in Chinese communities around the world would write the names of their loved ones who have passed on on paper lanterns with a candle inside. These lanterns are left to float down the river as a gentle guide for spirits to find their way back to the spiritual realm. It serves to also carry away bad luck, and dispel ill fortune. Think of it as a sort of GPS for the spirits. Yes, they've had their time during this month to visit and enjoy, and as all good things come to an end, we can also gently guide them and show them the lighted path back home. If you can't find one of these paper lanterns where you live, why not fold a little paper boat and let it float away? Find your own meaningful way of celebrating the festival. A new narrative Many talk about the superstitions to avoid during this period of the year. That makes for highly interesting conversations, but it also presents this festival as a somewhat dreaded or frightening one. Could we give especially to our children, a kinder, more human narrative of this festival? There are enough monsters under the bed, so why not use this festival as a time to nurture compassion and gratitude? The Hungry Ghosts Festival can have its beautiful side too and it's not all about scary spirits who seem literally hell bent on messing with the living. Popular movies have put spirits and the after life in a rather negative light, and the person writing this article also has an expiry date at some point and would rather not think that what's coming after is all doom and gloom! And really, what if spirits are not really 'hungry' for food but 'hungry' to experience the reminder of what their past lives were like and to see again the people they miss? If you are 'hungry' for some food for thought on the realm of the spirits, watch Japanese director Hirokazu Kore-eda's 1998 masterpiece After Life (also known as Wonderful Life ワンダフルライフ Wandafuru Raifu) where spirits are asked to choose one single precious memory to take with them as they pass into the next world. Not to be forgotten. That's what the Hungry Ghosts Festival is for. It's to feed beautiful memories of loved ones who have gone physically but are very much alive inside of us in what they have taught us. Choose your cup While it's tempting to use your favourite cup, it's better to choose one with a wide rim and a plain interior. You do not want fancy patterns or designs to distract you from seeing the tea leaves clearly. Get brewin'! Prepare your tea the way you always do. And while waiting, why not set an intention for the reading as the kettle is bubbling? It's a great moment to ease into a more mindful state. Sip mindfully As you sip on your tea, bring your focus to the thoughts or questions you seek answers to. Whether you believe it or not, we've all had that one inexplicable experience where the universe somehow responds to what we were thinking about at the exact moment! Ingredients Ingredients for the spice paste: • 6 shallots • 4 cloves of garlic • 2 red chili peppers (adjust to your spice preference) • 2 inches of fresh ginger • 2 inches of fresh turmeric (or 1 teaspoon turmeric powder) • 1 tablespoon coriander seeds • 1 teaspoon cumin seeds • 1 teaspoon fennel seeds • 1 teaspoon black peppercorns • 2 stalks lemongrass, white part only, thinly sliced • 4 kaffir lime leaves Ingredients for the curry: • 1.5 kg (3.3 lbs) lamb, cut into chunks • 4 tablespoons vegetable oil • 2 cinnamon sticks • 4 cardamom pods • 4 cloves • 2 star anise • 2 bay leaves • 400 ml (13.5 oz) coconut milk • 400 ml (13.5 oz) water or lamb stock • 2 tablespoons kecap manis (sweet soy sauce) • Salt, to taste • Sugar, to taste • Fresh cilantro leaves, for garnish Instructions 1. Prepare the spice paste: In a blender or food processor, blend together shallots, garlic, red chili peppers, ginger, turmeric, coriander seeds, cumin seeds, fennel seeds, and black peppercorns until you get a smooth paste. 2. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the spice paste, cinnamon sticks, cardamom pods, cloves, star anise, lemongrass, and kaffir lime leaves. Sauté for a few minutes until fragrant. 3. Add the lamb to the pot and cook until it changes color and starts to brown slightly. 4. Pour in the coconut milk and water (or lamb stock) to the pot. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low. 5. Cover the pot and simmer gently for about 2 hours or until the lamb is tender. Stir occasionally and add more water if needed. 6. Once the lamb is tender, season the curry with kecap manis, salt, and sugar to taste. Adjust the seasoning according to your preference. 7. Continue simmering the curry for another 15-20 minutes to allow the flavors to meld together. 8. Remove the pot from the heat and let the curry rest for a few minutes. 9. ✦ Many stepped into a yoga class out of curiosity, others were simply looking for a different exercise regime. Whatever the reason, those who continue to do it swear by the changes it has made to their lives. Given its popularity, yoga has now expanded across the world and has many faces. You can find yoga centres that are more classic, some have a neighbourhood feel and others can be quite fancy too. For those who are new and curious to begin, this overload of information can be confusing and even deter people from just giving yoga a go. When you practise regularly, this consciousness moves beyond merely the physical i.e. it's no longer about the postures (asanas) or breathing techniques (pranayamas). It spills over into every action you take in your life. You become more aware of how you communicate, how you eat, how you prepare your food, your relationships etc. Want to eat healthier? Isn't it boring? That really depends on how your yoga teacher gives the class. Yes, it can be slow, but there is a fluidity in the slowness, and it's in this slowness that we find tranquility and calm. It's a mental and physical calmness. You learn to observe with clarity. In our modern world, everything is too fast, too much, and yoga has a different rhythm. It allows you to breathe and to observe. Some may not like it, and that's okay! Is yoga only for flexible people? No. Yoga is a practice for life, it helps keep your body supple over the years. So if you're not so flexible, you'll benefit as it helps you to stretch. As we get older, we all lose our flexibility. Yoga helps the body to maintain flexibility long-term! Some also think that yoga is very acrobatic, and it isn't. The thing is, when yoga started to become popular, people see postures that are impressive on social media, but yoga isn't just that. Yoga is for everyone - children, teens, adults, the elderly. We tend to see more women in yoga, perhaps it's social conditioning that we think women do quieter exercises and men go for the rough stuff. That's changing nowadays. Find out more here: A good yoga teacher will adapt the class according to the people in the group, always taking into account that each body is different. It's all about respect really. You shouldn't be forced into doing postures that your body isn't able to do. We're here to heal bodies, not break them! Yoga is not a race, there is no end goal to rush towards, no perfection to attain. The most important thing is to really listen. Listen to yourself. How are you really feeling? Listen to your body. How is it feeling? Yoga is a great complement for all kinds of athletes - for surfers, for runners, cyclists etc. In many sports you may end up working one side of the body more than the other e.g. golf, tennis etc. and yoga helps you to balance that up. Other sports like cycling may give you tight muscles and yoga helps to ease and lengthen that out. Yoga is expensive. All you really need is a simple mat. Try not to get mats that are too cushiony. There are other tools like blocks and yoga belts which can be helpful, especially when it comes to adapting to physical limits, but again, they are not a requisite. In fact, you can always improvise and use a scarf or an old belt from your trousers! There is one style of yoga that does require more tools than others and that is Iyengar Yoga . But usually the centres themselves would provide the necessary tools. For clothes you just need simple, comfortable ones that allow you to breathe and move freely. Also, try to wear clothes that allow the teacher to see your alignment clearly. As for the place where you take classes, there are really all sorts. A centre that is more expensive does not necessarily mean the style of teaching would suit you best. You need to try several places. The most important thing you need is your willingness to get on the mat! And the next big thing is the ability to find a spot of time to allow yourself to actually practise yoga, to take quiet time for yourself to be calm, to just be with yourself. Yoga takes time, and you need patience to practise it on a regular basis. So more than money, I'd say bring your mat, your willingness and your patience! You must do meditation in yoga. Yoga in itself is already a meditation. It's a meditation in movement. What meditation asks of you is to simply Be Present. And that's what we're doing in yoga. Be present in your movement, in your postures, in your breathing. Right here, right now. For example, if you do Vinyasa Yoga , it combines breathing and movements and there is a continuous ebb and flow to it. You inhale with one movement and you exhale as you do the next. This requires a great level of presence and concentration in what you are doing. So really, you're already meditating in the movements themselves. In fact, for those who are a little more fidgety or nervous, yoga is beneficial because it's an invitation to try to find that oasis of calm within you. Yes, it's going to be more difficult for people who find it hard to be still, but that's what yoga is here to help you do. You need to have patience with yourself and give it time. It's not magic, and certainly not an overnight process. But it does pay off when you commit to it. Take time out for a bit of calm with Bernie Ginanne, Life Coach, who shares these powerful tips to bring us back to centre: Why are there no mirrors in some yoga centres? One reason is to avoid students focusing only on whether they look 'good'. The other reason is so students don't just blindly 'copy' what the teacher is doing. Listening is really key in yoga. Listen to the teacher and don't rely only on visual cues to do the exercises. Follow the teacher's voice as it guides you into the flow of the movements. Yoga is very introspective and not so much focused on the exterior. Do we have to do weird chants in yoga? Sometimes you hear people chanting or singing repetitive short phrases in Sanskrit in a yoga class. These are called mantras, and they are also a form of meditation. It's a way to create vibrations in the body and calm the body down. It's like how some kinds of music help to soothe the nervous system. Mantras work in a similar way. What you hear, when you sing it, it has a physical impact on the body and on your energy. It's not necessary to do it if you're not comfortable or if you're just starting out. Most committed students ultimately do get curious about it and want to try it. Ok, I'm interested! How does one start? 1. Which centre?: Check out centres around you, try a class and ask yourself if you're comfortable with the way the teacher conducts the class. Is it something that makes you want to go back a second time? That's really the most important thing. A good yoga class should help you feel better after the class, not worse! I would focus on how the teacher is and go for the one I feel most connected to. Some teachers have a teaching certification and some don't. A certification is not always a guarantee the teacher will be a good fit for you. Observe their behaviour - a person with a certification but who isn't respectful or kind is probably not someone you'd want to be training with! And don't be afraid to trust your own instincts when it comes to choosing a teacher. 2. Online or in-person? There are online classes nowadays, but I don't recommend online classes if you're new, as you need the teacher to correct you physically if you're out of alignment. 3. How often and when? It's ideal if you can do yoga every day, but if you're just starting out, I'd say three times a week is a good number to start. Personally I prefer to do yoga first thing in the morning, but you can practise any time. Try not to eat before class, or if you do, make sure there's a 3-hour space for your digestion to get through. When you do breathing exercises for example, it's really uncomfortable to do it on a full stomach. 4. Which type of yoga? There are many types of yoga, and for those who are new I'd say start with Hatha Yoga . It's the most 'classic' form of yoga. If you've been practising for some time and are eager to try something new, you can move on to other styles. Ashtanga Yoga for example is more demanding, and it may not be everyone's cup of tea. 5. If you do have some medical condition, make sure you speak with your doctor first before beginning any sort of exercise regime, and always let your yoga teacher know about physical problems and injuries. Why do yoga? As a child, I suffered from asthma, which doctors and medication could not cure. I started doing yoga when I was nine, and two years later, my doctors gave me full clearance and I have not had an asthma attack since. I was able to run with other children, and now I'm even going into surfing! There are days when I do get frustrated, and I need to bring myself back to centre, be patient with myself, recognise my limitations and accept them. We may not be able to look like the impressive postures we see on Instagram, and we simply have to accept it. If I have an injury that stops me from doing certain postures, that's something I also have to accept and adapt to. At the end of the day, yoga is really about self-care and self-love. Yoga is all about getting to know oneself, and each of us has such an immense universe within. The learning never ends! It makes you want to keep exploring your possibilities.
